There is nothing more frustrating than a production line that’s ready to go, but the ovens are still lagging. When you’re relying on convection alone, you’re basically waiting for the air to heat up before the food does. It’s a bottleneck that kills your momentum. That’s why we bring in medium-wave infrared (MWIR) lamps. Think of them as a turbo boost for your heat.
How it actually works
Most heaters just warm up the air around the food. MWIR is different. It sends out radiant energy that hits the product directly and sinks in immediately. We use tungsten filaments tucked inside quartz glass. Because of that setup, these lamps don’t need a long “warm-up” period. They hit operating temperature in seconds. You aren’t waiting for the whole oven cavity to get hot; you’re just hitting the target with concentrated heat right away.
Getting the gear right
Space is usually tight in these kitchens, so we design these tubes to fit into small footprints. The trick is using a high-wattage density. This gives you that initial “kick” you need to get things moving. To keep things simple, we match the voltage to your current control panel. Nobody wants to deal with bulky transformers taking up more room than they have to. Installing them is usually a breeze—either a quick drop-in replacement or a simple bracket mount. Just a heads-up: use high-temp wiring and solid connectors. You don’t want your terminals burning out right when you’re in the middle of a rush.
More batches, less downtime
The real win here is killing the “dead time” between batches. When you slash your pre-heat and ramp-up times, you suddenly find you can squeeze more cycles into a single shift. It just flows better. But here’s the thing: these lamps are powerful. If you go too heavy on the wattage without checking your conveyor speed or spacing, you’ll end up scorching the outside of your food before the middle is even warm. It’s a balancing act. You have to tune the radiant heat with your airflow to make sure everything bakes evenly.
