That’s because standard heating elements rely on moving air, and air is slow. We do things differently. We use linear shortwave infrared (SWIR) lamps. Instead of heating the air and hoping it reaches your bread, these lamps shoot energy straight into the dough. It cuts out the middleman. You get your batches out the door faster, and your production rhythm actually stays on beat. Heat that actually reacts Most coils take forever to warm up. These lamps? They hit full blast in seconds. This is huge when you’re running a high-volume line. You can’t afford to waste ten minutes every time you need to tweak the temperature. Plus, because the radiation penetrates deeper and faster, you get a hot core without accidentally torching the crust. It’s a much more forgiving way to bake. The nitty-gritty on the build We use high-purity quartz for the tubes. Why? Because rapid heating and cooling is brutal on materials, and quartz can handle that thermal shock without cracking. If a tube burns out, you aren’t looking at a total teardown. Most of our lamps use R7s or SK15 connectors. They’re simple drop-in replacements. You swap the tube, and you’re back in business. One quick tip: keep the glass clean. If grease builds up on the tube, it creates hot spots. That’ll kill your filament a lot faster than it should. A few things to keep in mind Higher wattage means more heat density. If you want that perfect, fast-browned crust, you’ll want the heavy hitters. But here’s the thing: all that power creates a lot of radiant heat. It can soak right into the oven’s outer shell. You’ve got to make sure your ventilation and insulation are up to the task. If you push the wattage to the limit without enough airflow, you’re just asking for the filaments to fail early. Balance is everything.
