
Stop Fighting Your Oven’s Hot and Cold Spots
If you’ve ever worked with a multi-deck oven, you know the struggle. You set the temperature, but the middle deck just won’t keep up with the top and bottom. It’s frustrating. You’re basically playing a guessing game with your bake times because the heat isn’t where it needs to be. We decided to fix this by putting fast-response infrared (IR) emitters into every single layer.
Why standard heaters let you down
Here is the thing about traditional heating elements: they’re just too bulky. They take forever to warm up and even longer to cool down, which usually means you overshoot your target temperature. Our IR tubes are different. They use a tungsten filament inside a quartz envelope to send out shortwave radiation. Instead of wasting time heating up the air first, the energy hits your bread or pastry directly. It’s almost instant. Since each deck has its own IR array, you can finally stop compromising. You can run a heavy sourdough on deck one and delicate pastries on deck two. They won’t fight each other for heat.
The nitty-gritty on the hardware
We use high-purity quartz glass because it lets the IR light pass through without blocking it. We’ve tuned the filaments to react the second the controller sends a signal. Depending on what you’re baking, you can go with clear quartz for deep penetration or coated versions if you’re after that perfect, golden-brown surface. And don’t worry about a massive overhaul. These tubes are designed to drop right into your existing oven racks. We use standard industrial connectors, too, so everything fits tight and you don’t have to worry about electrical arcs at the terminals.
A few things to keep in mind
Now, this much heat density is powerful, but it does put more pressure on your PID controllers. If your sensors are in the wrong spot or your switching is too slow, you’ll start seeing the temperature jump up and down. To avoid that, just make sure your thermocouple is sitting right in the IR path. That way, the feedback loop stays tight and your temperature stays locked in.
