
Fixing the “Cold Edge” Problem in Big Bread Ovens
If you’ve ever run a massive deck oven, you know the struggle. The center of the oven is a powerhouse, but the edges? They just can’t keep up. You end up with loaves that look great in the middle and pale, sad-looking crusts on the sides. It’s frustrating, and it kills your consistency. We found a way to stop that from happening using gold-coated quartz infrared tubes. Why the gold? Think about a standard quartz tube. It throws heat in every single direction. A lot of that energy just hits the oven walls and disappears. It’s a waste. By adding a thin layer of gold to the back of the tube, we basically create a thermal mirror. Instead of letting the heat wander, the gold pushes it all forward, right onto your bread. You get a concentrated blast of heat exactly where you need it. The nitty-gritty These tubes are built for heavy lifting. Because they focus the heat so well, you can get those perimeter temperatures up without having to crank the power draw and blow a fuse. We use high-purity quartz, too, so the tubes don’t warp or freak out after being heated and cooled a thousand times. One quick heads-up: check your wiring. These things react fast. If you’re swapping out old elements for these, just make sure your controllers can keep up with how quickly infrared heat kicks in. Making it work in your shop The best part is that these usually just drop right into your existing heating arrays. No need to rebuild the whole oven; they just step in and fix that “cold edge” bleed. There is one catch, though. Gold is picky. If grease or flour dust builds up on the coating, the mirror effect stops working. You’ll lose that edge advantage pretty quickly. Just keep them clean on a regular schedule, and they’ll keep performing. Simple as that.
